15 MINS | SUPERFOODS BREAKFAST PORRIDGE

Hey guys! At the start of October, I found my new motto, "I live to eat and eat to live!" Currently, both elements are equally important to lead a balanced, and sane lifestyle. Some days I live to eat, satisfy my sudden cravings for sour cream Pringles (once I start, I finish them all๐Ÿ˜), lemon meringue, and rice noodles. However, to enjoy these pleasurable cravings, it comes with an effort to listen and consume foods that my body really needs every day. This is where "eat to live" comes in place. Conscious eating is now a vital route to body and mental wellness. We need a certain amount of vitamins and minerals, antioxidants, anti-inflammatory, fibre and good fat every day to maintain a healthy weight and metabolism. So I started preparing quick hearty breakfast to act upon what my body needs in order to live better, to satiate my indulgence in diverse gastronomy experiences. 

One troubling issue I face for many years is my ability to stay sharp and focus. Lack of sleep and poor eating habits are the main contributing factors. In the past, my breakfast comprised of a cup of coffee with milk and no sugar, and a plate of fried bee hoon (Asian rice noodles) or a bread. Yes, I ate like a king, but that combination sent me straight to sleepy town within 2 hours. I was unproductive and often led to procrastination ๐Ÿ˜“.  

When I started reading widely across different nutritional websites and found out that superfoods might be the solution to boost my productivity indirectly. 

Now I eat like a wise king, everything is carefully selected to hit my quota of nutrients required per day! Likewise, coffee is still a must, but I replace rice noodles/bread with superfood porridge oats with fresh fruits and nuts! Oats will never look like a pile of plain and unappealing mush to me anymore...

This combination is prepared within 15 minutes every morning. Choosing a breakfast with complex carbohydrates takes the body longer to break down, hence this porridge lasts me for 3-4 hours, and curbs my appetite. Also, this is the portion I stick to every day, after calculating what is the recommended daily intake of each ingredient from these sources:

The first step to change was the hardest but I'm glad that I look at the positive side of consuming oats to make my mornings productive now. Actually I'm at the stage that I got tired with this combination, so I tend to brainstorm every Sunday and explore other combinations to spice it up. Therefore, oats can never be boring and breakfast remains to be the highly anticipated meal of the day.๐Ÿ˜Š

Lastly, avoid flavoured oats or instant oats mix as they are high in sugar and sodium content! 

Ingredients (serves 1)

  • ยฝ cup rolled oats
  • 1 tablespoon chia seeds
  • 1 cup almond milk
  • 4 strawberries 
  • 1 passion fruit
  • ยผ cup blueberries
  • 2 tablespoons ground flaxseeds
  • 2 tablespoons ground pistachios
  • 1 teaspoon turmeric 
  • 1 tablespoon virgin coconut oil

Directions

  • Add chia seeds and almond milk to rolled oats. Microwave porridge for 3 minutes or until it softens. 
  • Meanwhile cut strawberries and passion fruit in halves. Assemble the fruits on the porridge and sprinkle dry ingredients over. 
  • Grate turmeric over nicely assembled porridge and drizzle with virgin coconut oil.
